Mango Strawberry Smoothies with a secret ingredient!

I don’t know about you, but I am ALWAYS looking for new ways to sneak healthier foods into my daughter’s diet.  She’s almost three years old and currently her diet consists of cereal, poptarts, and chicken nuggets with a big glass of milk!  I spend hours upon hours cooking for her and my husband every week. However, when I place a plate of healthy food in front of her, she snarls her lips and says, “Eww mommy!  I don’t like it!” and proceeds to push it away.  Please tell me I’m not the only mama out there struggling with this? 

So, I’ve been trying to get creative in the kitchen with foods I’m making for her.  When I make muffins or pancakes, I try to sneak oats and fruit or some type of veggie in the mix.  She has no idea what’s in it, she just gets excited when I gladly say, “HERE!  Come eat this muffin!”  I feel like she might be a little bit on to me, so instead of urging her to eat a muffin, I gave her a “Strawberry Milkshake” in the form of a SMOOTHIE for breakfast! 

A milkshake for breakfast just gave me a lot of “cool mom” points. 

Little does she know mom might have hidden a couple healthy ingredients in this “milkshake”.  Clearly, she’s not going to ask, “Mommy, did you put CAULIFLOWER in my milkshake?”  So, I keep this little secret to myself.  Yes!  You guessed it. 

My secret ingredient in this Mango Strawberry Smoothie is frozen cauli-rice! 

Weird?  TOTALLY!  But to be perfectly honest, you can’t even taste it!  It’s white (obviously!), so it doesn’t change the color of the smoothie to something crazy that she’s not going to like.  For a little extra protein, I added Greek yogurt.  I LOVE to add Greek yogurt to my smoothies because it gives it a creamy  milkshake-like-consistency.  I added about 2 tbsp of maple syrup to sweeten this smoothie up just a tad.  If you don’t want to go the “sugar” route with sweeteners, try adding a super ripe banana!

Ingredients
  1. 1 cup frozen mango chunks
  2. 1 cup frozen strawberries
  3. 1/2 cup plain Greek yogurt (flavored if you choose)
  4. 1/2 cup frozen cauli-rice
  5. 1/4 - 1/2 cup milk (dairy or nondairy)
  6. sweetener of choice, optional (I added a little maple syrup)
Instructions
  1. Throw everything into a blender and blend until smooth
  2. Pour into glasses and sip!
